I would love to win cheffactor because I love cooking and eating. The dish I have put forward is me on a plate-the seafood I have chosen is a great Irish resource which always inspires me, the flavours are big and bold, you get to use your hands alot while eating this dish, its generous and its a platter which brings people together around one plate and share and enjoy the same experience. The qualities of this dish reflect me as a person and what I think food and eating should be all about.
You have 500 characters to tell us about your dish: 
My dish is inspired by two things-seafood one of our best natural resources and asian flavours whih I love and I think compliments seafood really well. My sea food platter is made up of the following - oysters with a ginger soya dressing, haddock poached in a laksa broth, crab claws with galangal, lemongrass, coriander and lime, prawns with chilli, lime and garlic, mussels cooked in a coconut broth infused with thai green curry paste and salt and pepper squid with a Vietnamese dipping sauce.

Chris is the best cook I know, and I know a few (sorry mum!). He completely deserves to win Cheffactor, I'm only sorry I wasn't there to try that fishy feast for myself, flavours sound fantastic. Good luck Bracky!
