
First of all - no exam results today, Im very disappointed but apparently we get called individually into the office tomorrow evening after demo to get our results!
Today was a really weird day for me - I kept making silly mistakes and had a lot to do so didnt have time for any of them. Therefore my presentation was rushed and doesnt look how I would have liked it to.
I made a Pork, Spinach & Herb Terrine, which took a lot longer than I thought. Lots of horrible looking pork products minced and mixed up with lots of herbs, cooked spinach & onions. Anyway it was really tasty even though it looks like crap!
I also started my flaky pastry for tomorrow. Rub butter into flour, add cold water to form a dough & then refrigerate. It then gets rolled out, more butter added refrigerated - then this is repeated another 2 times.
I was supposed to make a Besancon Apple Tart which is basically a layered apple tart with custard poured over it. My pastry was grand until I took it out of the oven after blind baking it, I must have cracked it on the way out because after layering up my apple slices I poured in the custard and it all started running out the bottom. Quick dash for a baking tray and then whacked it into the oven - but alas this didnt help. The custard cooked on the baking tray & the pastry went soggy so we decided to try and turn it into a carmelised apple tart by covering the top in sugar. This kind of worked until I tried to take it out of the tin and the sides were after getting stuck & then it fell apart. I barely got a slice on to the plate and was ready to give up on the day so my teacher ate it with her fingers and then asked me if I wanted to take it home.
