
Im afraid I have to admit I have being slacking off a bit on the blog front. So going back to last Friday (if I can remember that far back!).
First I got started on the French Onion Soup. Quite a few onions are required and it takes ages to caramelise them so left them do their thing while I moved on.
I made butter! I no amazing isn't it. Its actually really easy. Just keep whipping some double cream until it splits and then drain the butter milk (which you can use in Soda Bread). Sieve the butter then beat for another minute, sieve again. Rinse with cold water & sieve until the water runs clear. Weigh it, flatten it out and add 1/4 tsp salt for every 110g of butter. Mush it all up well and shape whatever way you like (keep your hands cold or use wooden paddles soaked in icey water). And hey presto...butter - Im very impressed with myself.
Next I prepared some Curly Kale. Just in case your not sure what this is, its a green leafy veg. Stalks are very stalky so had to remove all of these first. Then boil salted water, bring to the boil and cook for 5 mins. I strained off all the liquid and whizzed it in a magimix with some cream & butter. Its a really dark green colour & tastes nice too (sorry theres no picture!)
Then back to my soup. I brought the stock to the boil and added this to my caramelised onions and brought it back to the boil. Then toasted some baguette & grated some Gruyere cheese on top and toasted again. Popped this on top of the bowl of soup, yum.
