Ok, Im still sick but decided I wasnt sick enough to miss a morning in the kitchen. After a few hours of working away I started feeling very tired & everything was taking so long that I just wanted to finish & then forgot to take photos.
Anyway I made another batch of Puff pastry - same as last time make pastry dough - roll, shape, roll, shape, chill (3 times) - Ill use this on Monday.
Lobster with Cream & Herbs - First we had to put the live lobsters into a big pot with lukewarm very salty water and slowly bring it to a simmer to "put them asleep"! After this we drain off the water & boiled a Court Boullion - some wine, carrot, onion, peppercorns & bouquet garni (parsley, thyme, celery & bay leaf), popped the sleeping lobsters in this winey mix & cooked til they turned orange in colour.
Next to extract the meat - took me ages, theres so many little crevices to get the meat from & its so expensive you just cant waste any of it.
Then I made the sauce - sautéd some mushrooms (set aside), then gave the lobster a flash in the pan (added to shrooms). Fried shallots, wine & cream, reduced it & threw back in the lobster & shrooms with some freshly chopped herbs. Then put the whole thing back into the lobster shells for serving.
I also made some Parsley Pasta. Made pasta in the normal way with 00 flour, semolina flour, egg & water and added a couple of tablespoons of chopped parsley. Rolled it out, let it dry & then cut in into long strips like tagliatelle. Yum.
I made a second disastrous attempt at Sourdough but the recipe seems to confuse me each time & I missed a step again. So my dough was to sloppy and couldnt be baked - I had to add more flour & knead it, then shape it again & put into baskets to rise. So I will be baking it at home tonight.
