I am crazy about cooking! I believe in good, honest food made with the best ingredients and I believe that is the best way to describe the approach to food from both Cully & Sully and Ballymaloe. Attending the course at Ballymaloe has been a dream of mine for years as I am a passionate home cook waiting to take the step from my own kitchen and into the culinary world. As I am just finishing a degree in journalism, it seems the perfect time to get the chance to do more than just write about food.
You have 500 characters to tell us about your dish:
I have cooked an authentic Thai green curry with chicken, mini eggplants and sweet basil, which has simmered in coconut milk and has been seasoned with fish sauce and sugar. Both the recipe and my love for cooking have been passed on to me from my Thai mother who used to teach Thai cooking. Often when I have friends over for dinner I cook a number of different Thai dishes as is the tradition in Thailand. My green curry with chicken is always the favorite among my guests.
