I was visiting Cork with my family and we stopped off at Ballymaloe for some lunch in the café and so I could have a look at the cookery school. My son was eight at the time and he was highly amused at how excited I was simply to be in the school getting the programme and observing one of the classes for a short time. You have 500 characters to tell us about your dish: 
I couldn't live without sticky toffee pudding and as a newly diagnosed coeliac that was a possibility. I could live without most desserts but not sticky toffee pud. So I created a gluten free one that everyone can enjoy and you really can't tell the difference. It's light, spongy and dripping with fudgy hot toffee sauce finished with a good dollop of freshly whipped cream, hungry?!
